I had to share this yummy recipe for Banana Oatmeal Muffins that I got from my friend Amy Dreke.  Thanks for letting me share your recipe, Amy!  Give these a try when you have some “dead bananas” lying around.  When I buy bananas I secretly hope no one eats them so I can make these muffins or banana bread.  I was in luck this time around because I think the whole bunch of bananas went uneaten at our house!  Let the baking begin!

 Banana Oatmeal Muffins

1/2 c. sugar

1 egg, beaten

1/4 c. oil

1/4 c. milk

1 tsp. vanilla

2 ripe bananas, mashed

1 c. flour

1 c. quick cooking oatmeal

1 tsp baking soda

1 tsp baking powder

1/2 c. chocolate or butterscotch chips

 

 

Mix together the sugar, egg, oil, milk, vanilla and bananas.

 

 

Then add the flour, oatmeal, baking soda and baking powder.  Add the chips last.  I like to use the mini chocolate chips.  Will and I also suggest snitching some chocolate chips while baking!

Bake at 400 degrees for 12-15 minutes.  Makes 12 muffins.
